Brownies to us mean indulgence, so we don’t waste time on “lighter” recipes. We don’t add bits and bobs to our brownies, so no nuts, no chocolate chips or nibs or what have you. All our chocolate goes in one molten lava stream into the egg mousse. And we add a hell of a lot of chocolate, 70% dark couverture chocolate, whose flavour seems to intensify in the baking process. Our brownies have a crisp papery top that hides an intense cakey-gooey-ness inside.
