Our Scrumptious Granola Recipe
We don't want you to look at our ingredient list and be completely put off before you even begin so please bear in mind that one of the joys of running a bakery is having an abundance of random ingredients - we even stock regular and mini chocolate chips ffs, so we were spoilt for choice.
Our recipe was:
200g rolled oat
50g pumpkin seeds
50g almond flakes
2 tbsp chia seeds
1 tsp cinnamon
50g melted butter
50ml maple syrup.
Mix all of the above well in a bowl. Transfer to a baking tray so it's as much in a single/thin layer as possible. Heat the oven to 180 fan and bake for 10-12 mins. Every 3-4 minutes take the tray out and mix it about to ensure an even bake. You don't want your nuts or seeds scorched, just baked to a nice golden brown. Add 1 handful of choc chips after about 10 mins of cooling. These will melt a bit and create lovely chocolatey clusters. Add a smaller handful again when the granola is completely cool. The photo below is what we ended up with - fragrant, gorgeous and wholesome.
What you want to do is master the technique, which is super simple and then try out basic combinations before getting adventurous. Start out with oats obviously, add a nut (flaked almond, toasted hazel, chopped pecan whatever), a seed (pumpkin, sunflower, chia, poppy although you will spend time fishing them out from between your teeth!), some aromatics (cinnamon or cardo or vanilla). Et Voila, a healthy treat for any time of the day!
